And Why You Need One", the piece featured an in-depth look at some leading plant-meat purveyors, most notably The Herbivorous Butcher in Minneapolis and Atlas Meat-Free Deli outside Miami, FL. The article had the chefs explain the origins of their individual shops, while they also listed some of the surprising ingredients (from tomatoes to apple juice to molasses) they use to give their meat creations a satisfying taste and texture.
